These creamy, tangy dream bars are a delicious and different way to use up that abundant supply of rhubarb. They’re a nice change of pace from the usual pie or cake recipe.

Ingredients

  • 2 cups all-purpose flour
  • ⅔ cup confectioners’ sugar
  • 1 cup butter, softened
  • 3 cups white sugar
  • 1 ½ teaspoons salt
  • ½ cup all-purpose flour
  • 4 large eggs, beaten
  • 4 ½ cups chopped fresh rhubarb

Directions
